Well, America's most honest holiday is upon us .... Thanksgiving. A time for feasting and spending time with your loved ones. And if it was up to you, you would skip the cooking part and just spring for a feast cooked by someone else at the Gaylord Texan, right? But you don't get a vote, do you? Mom wants everyone to get together at her house. Joy. Now Mom is making the turkey and the stuffing, but she wants everyone to bring a side dish. You could gloop out a can shaped mass of cranberry sauce on a plastic saucer OR you could actually bring something that will impress even your jaded, uninspired family. This is easy.
Honey Ale Sweet Potato Casserole
Ingredients:
- 8 large sweet potatoes, peeled and cut into chunks.
- 2 bottles of a Honey Brown Ale
(There are a few breweries in Texas that make Honey Brown Ale ... Abilene Brewing Company,
makes a decent honey brown and is the closest to Dallas. Newcastle makes a honey brown ale but if you cannot find a honey brown ale at Spec's, Total Wine or Lonestar you can find the Dundee Honey Brown Lager in many locations.)
- 5 tablespoons of butter (the real kind, damnit, no margarine for snobs).
- 2 tablespoons of brown sugar
- 1/2 cup of pecan pieces
- 1/2 teaspoon of salt
- 1/4 teaspoon black pepper
Preheat the oven to 350 degrees F. Boil the sweet potatoes in 1 1/2 bottles of the beer and enough water to submerge them until they are tender (about 25 minutes).
Drain the potatoes and add the remainder of the beer and the other ingredients but hold the pecans for later. Whip with an electric mixer until creamy.
Butter a large casserole dish and place the potatoes in and scatter the pecan pieces evenly over the top. Bake for 20 minutes until the top is browned.
DONE! Now let's eat!

Our Thanksgiving Day 2014 Beer Recommendations
First Course - Appetizer
"Start light, finish heavy" is our motto so we are going to start with a Goat Cheese Salad.. We recommend Hoegaarden as a light, refreshing delight to begin the day of decadence. The oh-so-slight citrus and light texture do not overpower the delicate flavor of the cheese. Make sure the you pronounce the beer name the Dutch way (Hoo-garten) and correct everyone when they pronounce it the American way (Hoe-garden).
Should you wish to support your local producer, we heartily recommend Community Wit to fulfill your needs.
Second Course - The Feast
Turkey is such a delicately flavored meat that it is easy to overpower the flavor. You hop heads are reading this and yelling "Double IPA!", which is, of course, the exactly wrong answer. If you are a hop monster your palate has already been destroyed and you can stop reading now.
There are two ways to consider this pairing .... if turkey is the star of your show, you should consider something light and slightly citrus with ample carbonation. Unibrou's Ephemere is very slightly sour with the classic holiday flavors of cranberry, coriander and orange peel. The effervescence is light and friendly on the tongue, cleansing the palate as you progress through the meal.
If the turkey less important to you and you live for the dressing and sides, let's talk brown ales. Actually, let's go super geek with this one and suggest Westmalle Trappist Dubbel. This magnificent brew is so superbly crafted that none of the flavors are identifiable. It is slightly sweet and malty with a clean dry finish and so complex that almost any food will match perfectly. It has the added bonus of being a trappist ale, which means that you can drone on and on for hours about the history of the monks toiling away in their monasteries and creating these wonderful beers as a food substitute during fasting. So very snobby, so very annoying.
Your local substitutes would be Rabbit Hole Rapture or Revolver Bock
Ham or roast beef instead of Turkey? Think British Pale Ales or Belgian Tripels.
Vegan or Vegetarian? As that the fats are missing and that flavors are .... muted, let's recommend that you go big. Heck, in this case drink anything you want.
Third Course - Dessert
So many desserts ..... so many flavors. For conversations sake, let's make this easy. Try to match the flavors based on the type of dessert. For example a pumpkin ale to accompany a pumpkin pie, a chocolate stout for chocolate cake, a lambic for a fruit pie, etc., is the easiest way to go. However, you may choose to skip the food part altogether and just have a dessert beer....that is a decision that we can stand behind. May we suggest the Buffalo Bayou Gingerbread Stout? Or perhaps Sam Adams Imperial white? Jolly good.

Rabbit Hole Brewing New Beer - Hole Lang Syne - Release Event -
Rabbit Hole Brewing sponsored an special event at the House of Blues on November 11 celebrating the release of their new Hole Lang Syne. This beer is the first craft beer created exclusively as a New Years Eve celebration brew. We sent our own Flanders Redale to the event and here are his musings:
Hiddely-ho, beer-loving neighbors!
I hope you've been shunning the frumious Bandersnatches, because the local brewery obsessed with Alice in Wonderland has something special in store for you this holiday season.
No, not THAT holiday. Every brewery does a ChristmaHanuKwanzaakah beer, it seems...and the guys out at Rabbit Hole can't be that predictable. Ergo, their special holiday brew: Hole Lang Syne.
It's a Belgian golden strong ale, which is a bit of a rare bird in itself. However, it goes over the top with the addition of raspberries and black cherries. I was fortunate enough to be able to taste a test batch at a special House of Blues event, and it is something else. The best description I was able to verbalize was a mixture of 80% Duvel and 20% Framboise. Hole Lang Syne was served in a champagne flute, and I'd gladly drink this before any bubbly I've ever tasted...and at a projected 9-10% ABV, limited consumption is probably wise.
The good news: They will be bottling it! Well, hand-bottling it, with an oddly-specific run of 608 750mL bombers: 50 cases for distribution, and bottles #1-8 available as door prizes at their 1st Anniversary Party on December 13. It will also be available in the typical keg distribution, but most likely in a very limited fashion.
The better news: Rabbit Hole will start canning 561, 10/6, and Rapture during the first quarter of 2015. The English IPA 10/6 (pronounced "ten and six", as in ten shillings and sixpence, the price of the Mad Hatter's hat) and the flavorful brown ale Rapture (I know...that's almost oxymoronic) will have a place in my beer fridge once they hit the shelves. They are both deee-libe-libety-lectable.
The bad news: It's not December 13th yet.

New Dallas Brewery Alert: The Texas Ale Project
We have heard a few whispers about a new brewery in town so we asked Brent Thompson, owner and brewer of the Texas Ale Project for a bit of background. He kindly responded to our request as follows:

They are already brewing their first beers the Fire Ant Funeral, a traditional American Amber Ale and Naked Truth, a dry hopped American Wheat Ale. The Amber uses 7 different malts to build a rich, complex brew while the Wheat is a light, full bodied brew. The goal is to make flavorful, easy drinking ales, according to Thompson.
They expect to have the T.A.P. Room at the brewery open to the public on Thursday, Friday and Saturday, in December or January. While their website is not yet ready to can follow their progress at Texas Ale Project on Facebook. We look forward to trying and reviewing their beers and wish them luck in their endeavor. The Yard House - Addison
So you've heard of the Yard House, right? No? Oh come on, it's a big chain beeratorium found pretty much nationwide. If you haven't visited one before I can tell you that you have visited it before as that it is quite similar to several other chains.The menu is quite large and the selection is quite varied, with most of the food giving the feeling of having been assembled rather than prepared. The beer menu can be seen at the bottom of this review.
